What exactly are tartufo chocolates?

Italian Tartufo chocolates consist mainly of Hazelnuts and Chocolate. The base consists of hazelnut paste. For the classic „Tartufi originale“, the hazelnut paste is enhanced with dark chocolate, cocoa and hazelnut pieces. This variety is also known in German-speaking countries as Truffle chocolate or chocolate truffle known.

Afterwards, the mixture is shaped in the traditional Tartufi style, dusted with cocoa and lovingly packaged by hand – each individual chocolate on its own. Meanwhile, Tartufo chocolates are available in many different varieties – with white chocolate, pistachios, amaretti, cappuccino and many more…

With classic sweet tartufo (also: original sweet truffle) is the Original variety the delicious dolci, which also serves as the base for many other variations (except for the Tartufo dolce nero, which uses extra-dark chocolate, and the Tartufi dolci bianchi and Tartufo al pistacchio, which use white chocolate).

The special thing about the tartufi is the high proportion of hazelnuts. And not just any! Only the finest „Tonda Gentile“ hazelnuts from the Piedmont used. Piedmont is known for the finest hazelnuts in the world with an excellent, very aromatic and cocoa-like flavour. Coated in chocolate – just like Tartufi pralines – this is shown to its best advantage.

By the way: The cultivation area for Piedmont hazelnuts is limited to the „Piemonte IGP“ (Protected Geographical Indication) region to guarantee the best quality.

Ingredients & Production of the Chocolate Tartufo 

Chocolate tartufo consist of hazelnut pieces, chocolate (Sugar, cocoa butter, whole milk powder (if used), cocoa mass, soya lecithin, flavouring, cocoa) cocoa powder and Hazelnut paste. As the German translation „Tartufo Schokolade“ is not entirely clear, it may refer to either dark or milk chocolate, depending on the variety.

The used hazelnut variety „Tonda Gentile“ from Piedmont is considered the best in the world. The roasted „Nocciole Piemontese“ come from the area around the town of Alba. The particularly delicious hazelnuts inspired Sebaste, so to speak, to create the truffle pralines.

The history of the Tartufo truffle

„Tartufo means truffle in German. And perhaps you have also wondered: What do chocolates actually have to do with truffles? Because truffles actually are mushrooms. Or is it just a funny coincidence?

In fact, it is not a coincidence, but a astonishing story, like from a real Tartufo truffle chocolates came to be. And it goes like this:

For centuries, the northern Italian region Piedmont known for the Alba truffle. This involves an aromatic white truffle fungus. The white truffle from Alba has gained so much fame as a Piedmontese speciality that a pastry chef came up with the idea to „sweet truffle“ created in the style of the real truffle – a praline. To make the sweet truffle resemble the irregular, round shape of real truffles, he used Hazelnuts and enveloped her with Chocolate. And so the first Tartufo dolce was born!

The family Sebaste Antica Torroneria Piemontese developed this idea further and gave the tartufo praline its now typical shape.

So the Tartufo pralines are a affectionate tribute to the real one Piedmontese truffles. And these days, the „fake“ tartufo is at least as sought-after as the real thing!

What are tartufo chocolates?

Tartufo chocolates are Italian chocolates from Piedmont. The main ingredients are hazelnuts and chocolate. The original recipe uses only genuine Piedmontese hazelnuts. For the classic Tartufi, hazelnut paste is mixed with chocolate, cocoa and hazelnut pieces and dusted with cocoa. The exact recipe for the hazelnut chocolates is, of course, secret.

How best to store truffles?

Truffles keep best when stored in a cool, dark and dry place. In summer, it is recommended to store them in the fridge so that they do not melt.

Is it Tartufo or Tartufi?

Tartufo is the Italian for „truffle“. Tartufi is the plural. So both are correct. What is not correct are the terms Tartofu, Tatufo, Tartuffi, Tortufo, Tartoffo or Tortufo.

What is Tartufo Stracciatella?

Tartufo Stracciatella are Italian chocolates (tartufi) with white chocolate, hazelnut pieces and chocolate chips. This flavour is currently only produced by the manufacturer Antica Torroneria Piemontese from Italy.

How long does tartufo keep?

Tartufo chocolates have a shelf life of at least 12 months according to the best-before date. The delicious Tartufo chocolate certainly won't last that long! 😉

Can you buy a chocolate-flavoured Tartufo? 

There is no such variety as „Tartufo chocolate“, because all Tartufo chocolates contain chocolate. However, most people understand this term to mean the classic Tartufo (Tartufo dolce originale).

How many calories does Tartufo chocolate have? 

Tartufo chocolate has around 540 calories per 100 g. This makes the hazelnut pralines similarly rich to normal chocolate. 

Is Tartufo cioccolato the same as Tartufo dolce nero?

No, Tartufo cioccolato is not the same as Tartufo dolce nero. Tartufo cioccolato is the generic term for all chocolate truffle pralines. Tartufo dolce nero (or Tartufo dolce extranero) is a specific variety that uses particularly dark chocolate.

What types of tartufo are there?

For example, there are these other popular varieties of Tartufi:
– Tartufo bianco pralines: This variant is made with white Tartufo Bianco chocolate and chopped hazelnut kernels and is one of the classics among tartufi dolci.
– Pistachio Tartufo (Tartufo al pistacchio): White chocolate is also used here, but instead of nuts, it is the pistachios that give the truffle its special flavour.
- Tartufo Amaretti: Anyone who is a fan of the amaretti macaroons that are often served as a sweet with coffee will love them – Tartufo Amaretti contain finely chopped pieces of amaretti.
– Tartufo Stracciatella: The Stracciatella variant comes with dark chocolate sprinkles.
